Stories return in tasting of Retrogusti, and to inaugurate 2026 we choose to double. For the first time, the same story comes to life in two different regions, with two distinct gastronomic experiences but united by the same root: the White Poor Man's Bean from Pollino. 

A small legume cultivated between Calabria and Basilicata that contains a great narrative made of peasant memory, biodiversity, and silent resistance.
In the heart of Pollino, it is still sown on small plots of land, with seeds passed down from generation to generation, far from the logic of industrial yield.

It is an identity food, preserved by the Slow Food Community, a symbol of a mountain that does not want to forget.

We chose to tell its story twice, because each territory can offer a different nuance: in Prato, Tuscany, and in Morano Calabro, in the heart of its land of origin. 

Due date, two menus, two gastronomic interpretations and different pairings to show that tradition can engage with different sensibilities without losing authenticity. In Prato, we will be hosted by To Wine Enoteca, while in Calabria the event will take place at Catasta, a cultural and environmental center at the foot of the Pollino. 

The Calabrian appointment is organized in collaboration with Azienda Agricola Carlomagno, Cantine Viola, Ferrovie Calabro Lucane, Terraegusto, Pasticceria Silvana, and Agricola Donadio.
The music that will accompany the event will be selected by Saro Costa.
