“Sea Traces” is a journey built around balance: between what comes from the kitchen and what takes shape in the glass, between depth and lightness, between technique and immediacy.
This new installment of Tasting Stories with the Fuori menù format takes shape in Prato, at Le Garage Bistrot, in a kitchen that works with the material carefully and in moderation, starting from fresh ingredients and from a dish construction that aims to enhance every element without overlap.
The menu unfolds in four courses and follows a clear line, tied to the sea but without rigidity, leaving room for contrasts, textures, and deeper passages. A journey that continues in the glass, with the wines of Donnafugata, chosen to accompany each dish naturally, maintaining balance and consistency throughout the tasting.
In the dining room, as always, there will also be room for stories: those of the person who created the dishes, chef Mara Taddei, and of the person who produces the wine. A way to follow the journey from the inside, without interrupting the pace of dinner.
A rendezvous that embraces the changing season, bringing it to the plate.
