There is a fire in Puglia that has never gone out.

It burns slowly and smells of meat, wine, and time. It is the fire of the stove, an ancient and popular ritual that still today brings people together around the embers, just like it used to be.

Retrogusti signs a new appointment of the format Stories in Tasting to bring back to life the magic of the Crispiano stove, in the place that more than any other guards its memory: La Cuccagna - Giro di Vite, a historic restaurant and modern tavern, where the Marsella family has kept alive for over sixty years the most authentic tradition of Apulian meat.

Here the grill is an ancient language.

Every skewer, every cut, every sizzle tells the story of hands that have learned to feel the right point of cooking without a thermometer, but with the eye and the soul.

And around the fire, as has always happened, conviviality opens up: a glass of wine, a story, a shared memory.

During the evening, the selected meats from the Fornello will be the stars of a tasting journey that intertwines flavor and memory, paired with the wines of the company L’Archetipo, a winemaking reality from Castellaneta born from the dream of Francesco Valentino Dibenedetto, a farmer and agronomist who has been cultivating the land since the 1980s following the principles of synergistic agriculture.

In his vineyards, at the foot of the Murgia, nature works without forcing: no plowing, no synthetic chemicals, just the spontaneous balance between soil, vine, and sky.

This yields pure wines, fermented with indigenous yeasts and unfiltered, capable of returning the authentic taste of the fruit and the truest voice of Puglia.

A dinner that is, first of all, a tribute to slowness, to the land, and to those who, with passion and craftsmanship, still keep the flame of Apulian tradition alive today.
