The chocolate we know today has its origins in a journey that spans centuries. Before reaching European tables, it was a ritual drink of Mesoamerican civilizations, tied to religion, power, and trade. With the conquest of the New World, cocoa crossed the Atlantic and began a transformation that would slowly lead to the creation of modern chocolate.
The new event with the Tasting Tales of Retrogusti at the Strozzi Bistrò follows this very path. In just over an hour, we will journey through geographies, epochs, and cultural meanings, starting from cocoa as an ingredient and arriving at the tasting of chocolate.
The journey begins at the table with a first tasting that uses cocoa as a spice, recalling one of its oldest uses in cooking.
We then move on to the world of artisanal chocolate with Alessio Tessieri, master chocolatier and founder of the Chocolate Academy Center Florence, a venue dedicated to training and research in the field of chocolate. Tessieri will present some of his creations signed Noalya, accompanied by a first pairing with Scuppoz ratafià, a traditional liqueur obtained from the infusion of fruit in alcohol and sugar.
The producer Scuppoz will tell the story and characteristics of this liqueur, exploring possible pairings with chocolate.
The evening concludes with a guided tasting led by Tessieri: a moment dedicated to understanding how to observe, smell, and taste chocolate, learning to recognize its aromas, textures, and flavor nuances.
