There are scents that tell of a land more than any story: in Puglia that scent is the grill, the woods that slowly burn and the Puglian bombette that sizzle, juicy, over the live fire. Small, stuffed, irresistible: an absolute symbol of the regional gastronomic tradition.

For this new appointment of Stories in Tasting, we look forward to seeing you on Sunday, November 30th at 1 PM at La Braceria del Birrificio in San Giorgio Ionico (Taranto).

A lunch designed for those who love to experience Sunday as a ritual of taste, between tradition, conviviality, and flavors cooked as they once were.

The bombette originate from the famous ready-to-cook grills, the ancient Apulian butcher shops equipped with embers where one could choose the meat and see it cooked immediately. It is here that the bombetta became queen: a thin wrap of capocollo traditionally stuffed with caciocavallo, spices, and a few essential ingredients.

The Braceria del Birrificio takes up this tradition and enriches it with a creative touch. Next to the classic versions, there will indeed be bombette with surprising fillings, designed by the staff: original combinations that respect the typical recipe but interpret it with imagination, offering a tasting experience unlike any other.

All strictly cooked on the grill, as the tradition of the ready stove demands.

Alongside the grilled bombette skewers, the lunch will include side dishes prepared in the pignata, the characteristic terracotta vessel from Puglia. The slow and even cooking of the pignata enhances aromas, textures, and fragrances, delivering those "home" flavors that belong to the most authentic Puglia.

Completing the experience will be the craft beers produced by the local brewery, designed to accompany the juiciest part of the meat and the intensity of the side dishes.

Not just a simple meal, but a journey into the Apulian gastronomic tradition: an experience designed for those who wish to discover Puglia through its truest flavors, one bite at a time.
