The Delights of Dahu, pride of the Cottian Alps

Between tradition and innovation, small producers come together to enhance the mountain through authentic flavors, excellent products, and a hospitality that tells stories of communities and territories to discover.

Delizie del Dahu is a source of pride for the food and wine companies in the valleys of the Piedmontese Cozie Alps, Germanasca and Chisone. There are fourteen small producers and four local merchants who have come together to form a network to advocate for a lifestyle choice through a territorial brand that tells the story of mountains, quality production, and attention to the environment in which we work and live. Finally, particular care is taken in welcoming travelers who, drawn by curiosity towards a true mountain community made up of families, open bars and shops, schools, social and cultural activities in a splendid territory, visit it in all seasons.

Producers, processors, and sellers of Dahu Delicacies start from the land and tradition, often familial, to enhance and innovate their products.

Emanuele produces jams, including the rare chestnut one, and looks for new ways to use the small mountain fruits. Franco creates preserves that do not exist elsewhere, recovering ancient local cultivars and keeping the shores around the villages clean.

Then there is Nicoletta, who expands the boundaries by bringing lard and mocette to fairs and markets, true delicacies of the territory. Roberto, who pairs meats and creates sausages of all types, including the local mustardela, a Slowfood product linked to the local Waldensian culture. 

Chiaffredo with his sons brings the cows up from the stables of Villa Agnelli in Villar Perosa every year to the mountain pastures of the Orsiera Rocciavrè Natural Park to produce unique and high-quality cheeses like Plaisentif, the cheese of violets, or Saras of fen. The Sanmartino brothers move up to the meadows of Val Troncea in summer and return with Formaggio del Dahu, a newly conceived inclined toma made from raw milk, aged for at least 2 months, created with a specific protocol about ten years ago. 

Nicolò and Natalia, a young couple, who with the recovery of old terraced vineyards of heroic wine produce the precious Ramiè, the local wine that is part of the Pinerolese DOC known since the times of Richelieu. Marco and Daniela, after traveling the world, decided to settle among the mountains of Val Chisone to produce high-quality honey like Emiliano, who is also a honey producer, and meets with schools to talk to children about sustainability education.

It is a network that promotes the products of its own lands, acting as an ambassador of a mountain that welcomes, attentive to the relationships with other local actors and with the guests who increasingly come to walk, climb, discover, and enjoy a territory.

The producers of the Delights are just like the dahu, the mythological animal of the Alps, a bit chamois and a bit ibex, which stubbornly never leaves the mountain because it is unsuited for life in the plains, a truly thoughtful choice based on deep common values of respect for the environment, craftsmanship of productions, and care for quality. 

And if, on one hand, the work of these small craftsmen keeps alive the knowledge of the past and is based on traditional techniques, on the other hand, it becomes the foundation for innovation with creative processes in search of new flavors and formats capable of tantalizing the taste buds of today's customers.

Delicacies include wine, honey, sweets, mountain potatoes, meats, cured meats, cheeses, and much more.

A special basket created not only to enhance quality products and increase sales volumes but also to support work in the mountains and make the alpine valleys a lively area where it is possible to stay and even attract new mountain dwellers willing to share its values, as is already happening.

The Delights of Dahu network indirectly enhances the awareness of the narrative and attractive potential of local food heritage, not limited to individual products, but telling the stories of processing techniques, the history of the landscape, customs, and traditions related to food. Because working on the creation of a shared brand for the collective distribution of products from small local businesses means giving visibility to local products while at the same time building a strong image, highlighting on the one hand the quality and on the other the production methods and the identity value that ties them to the territory.

A territory that is increasingly being rediscovered and enhanced thanks to direct contact between guests and producers, creating multisensory experiences at the company that allow guests to take home a unique experience and the territory to benefit from positive economic and social impacts. The themed walks with final tastings, visits to farms or artisanal workshops with direct storytelling from the producers of the Delizie network are all elements that increase the value of the product for the consumer, consequently the possible margin for the producer, and at the same time promote customer loyalty over time, thanks to the interpersonal relationship that is established between guests and hosts.
