Diego Fernando Martínez Ortez
Diego Fernando Martínez Ortez comes from a family marked by generational change in the agricultural world: his grandparents were farmers, while the generation in between shifted toward more bureaucratic approaches. This divide led him to question established concepts and return to his roots as a farmer and agricultural engineer.
His work focuses on specialty coffee from a critical perspective, addressing the historical distortions through which importing countries have concentrated value and narrative around coffee, often disconnecting it from its origin. In response, he proposes a model in which coffee is recognized based on its region of production and in which roasters and coffee shops act as commercial allies within a single supply chain, collaborating to interpret—not appropriate—its identity.
He is currently developing a research project based in Peru, focused on soil regeneration and the link between plantation microbiology and fermentation processes. His approach aims to demonstrate that the quality in the cup is a direct consequence of a living system, in which soil, cultivation, and processing are deeply interconnected.
